Meatless Monday: Vegetable Curry Over Fried Rice

We visited my parents this weekend and picked up even more fresh veggies from their garden. I also picked up a couple cans of coconut milk on sale recently. So I'm making what looks like a yummy curry with fried brown rice.

I would really like to beef up my pantry of Asian ingredients like fish or shrimp paste, oyster sauce, sesame oil and the like so I can make more recipes like the ones posted at CityMama. There's a big Asian supermarket near the Target and Food4Less, and I'm tempted to make the drive over there this week since I'd also like to buy some Kellogg's products at Food4Less to do the $10 Kellogg's rebate. However, I'm also reluctant to make an unnecessary driving trip because I'm missing a license plate and my registration sticker right now. It fell off and I have sent for replacements, am waiting for them. I already got pulled over once and got a warning, and have been told I CAN get a ticket for this even though I'm waiting for the new plates. :-(

Hm, there is a driver's facility by those stores. Maybe I should go get temp plates, which would certainly justify the trip to the grocery store over there as well.

Anyway. We have so many green beans from my parents garden and I want to get them cooked up before they lose their sweetness. Here are some other green bean recipes I looked up:
